Tirokafteri – Greek Spicy Feta Dip
Ingredients
1 1/3 c feta cheese
1 c roasted red peppers, drained
1 small garlic clove
1–2 teaspoons chili flakes
2 tablespoon lemon juice
3 tablespoon extra virgin olive oil
2 tablespoon Greek yogurt (optional)
For serving: pita bread, olive oil drizzle, extra chili flakes
Directions
Add the feta cheese, roasted red peppers, garlic, and chili flakes to a food processor and pulse several times until roughly combined.
Add the lemon juice and blend on medium speed for about 20 seconds until the mixture begins to smooth out.
Slowly drizzle in the olive oil while blending on low speed until the dip becomes creamy.
Add the Greek yogurt if using and blend briefly until fully incorporated.
Taste the dip and adjust the chili flakes or lemon juice depending on your preferred spice level.
If the dip is too thick, add a teaspoon of olive oil and blend again briefly.
Transfer the dip to a bowl and smooth the top with a spatula.
Let the dip rest for about 10 minutes so the flavors combine.
Drizzle with olive oil and serve with warm pita bread or fresh vegetables.
