Spicy Cajun Cod Strips with Zesty Lime Dip
Ingredients
1 pound cod fillets, cut into uniform strips
1 cup all-purpose flour
1 tablespoon Cajun seasoning
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper, adjusted to taste
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 large eggs, beaten
1 cup breadcrumbs, panko or regular
Vegetable oil, as needed for frying
Zesty Lime Dip:
1/2 cup sour cream
1/4 cup mayonnaise
Zest of 1 lime
2 tablespoons fresh lime juice
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon fresh cilantro, finely chopped, optional
Directions
In a shallow bowl, combine flour, Cajun seasoning, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper. Place beaten eggs in a second bowl and breadcrumbs in a third.
Dredge each cod strip in the seasoned flour, then dip into the eggs, allowing excess to drip off. Coat evenly with breadcrumbs, pressing gently to adhere.
Pour vegetable oil into a large skillet to a depth of about 1/2 inch. Heat over medium-high until shimmering and hot.
Working in batches, carefully add cod strips to the oil. Fry for 3 to 4 minutes per side until deeply golden and cooked through. Transfer to a paper towel-lined plate to drain.
In a small bowl, whisk together sour cream, mayonnaise, lime zest, lime juice, garlic powder, salt, and black pepper until smooth. Fold in cilantro if using. Serve cod strips hot with the chilled lime dip and fresh lime wedges.
