Poke Bowl
Ingredients
1 pound protein
(sushi grade ahi tuna or salmon, cooked popcorn shrimp, or a combination) *
Marinade:
1/4 cup soy sauce
1/2 tablespoon rice vinegar
1 teaspoon sesame oil
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon grated ginger
1/4 cup thinly sliced green onion
1 1/2 – 2 tablespoons sesame seeds
Base:
Jasmine or sushi rice cooked and cooled to room temperature, or chilled
Optional Assorted Toppings:
English cucumber, thinly sliced or diced, or Asian Pickled Cucumbers
mango, diced – fresh pineapple, diced
avocado, sliced or diced – seaweed salad
edamame, cooked and shelled – radishes, thinly sliced, or Asian Pickled Radish
carrot, cut into thin strips or Asian Quick Pickled Carrots
beet, cut into strips – nori sheets, thinly sliced
pickled ginger – sprouts
crushed peanuts (garnish)
sliced green onions (garnish)
sesame seeds (garnish)
Spicy Mayo:
1 tablespoon sriracha (adjust depending on desired spice level)
1 teaspoon fresh lime juice
1/2 cup mayo
Directions
Combine the marinade ingredients. Add your choice of protein & let marinade for a minimum of 30 minutes.
* You can use your protein (Tuna or Salmon) raw, or slightly seared to warm.
Mix together all ingredients of the spicy mayo.
Add the cooked rice to the bottom of your bowl
Layer or arrange in sections the protein, and desired toppings to each bowl. drizzle over top with the spicy mayo. Serve immediately..
