1 cup white vinegar
3 cups filtered water
2 tablespoons salt not iodized
green tomatoes sliced into wedges
garlic sliced (to taste)
Add vinegar, water, and salt to a microwave safe dish and stir. If salt does not dissolve completely, microwave and stir in 30 second increments until it does.
Place sliced garlic – I suggest starting with no more than half a clove per 24 ounce jar – and tomatoes into jars.
Pour brine over tomatoes, and tap gently on the table to bring bubbles to the surface. Add more brine if need be.
Cover and shake gently, refrigerate overnight.
