Mediterranean Spinach and Feta Crisps
Ingredients
1 cup fresh spinach, washed and chopped
½ cup crumbled feta cheese
¼ cup all-purpose flour
¼ cup grated Parmesan cheese
2 large eggs, beaten
¼ teaspoon garlic powder
¼ teaspoon dried oregano
Salt and pepper, to taste
Olive oil spray
Directions
Preheat your oven to 375°F (190°C).
Line a baking tray with parchment paper or lightly grease it with olive oil spray.
In a large mixing bowl, combine chopped spinach, crumbled feta, Parmesan, flour, garlic powder, oregano, salt, and pepper.
Stir in the beaten eggs until everything is well coated and forms a sticky mixture.
Scoop about 1–2 tablespoons of the mixture and place it on the baking tray.
Flatten each mound with the back of a spoon into a thin circle (about 2–3 inches wide).
Make sure they’re evenly spaced, as they’ll spread slightly while baking.
Lightly spray the tops with olive oil for extra crispiness.
Bake for 10–12 minutes, or until the edges turn golden brown and the crisps look firm.
Let them cool slightly—they’ll crisp up more as they rest.
Serve warm as a snack, or let them cool and store in an airtight container.
Garnish with extra oregano or a squeeze of lemon for a Mediterranean twist.
