Homemade Cucumber Sandwiches
Ingredients
1 medium cucumber, thinly sliced
1 (8 oz) package cream cheese, softened
2 tablespoons mayonnaise (optional, for extra creaminess)
2 tablespoons fresh dill (or parsley/chives, finely chopped)
1 teaspoon lemon juice (freshly squeezed)
ΒΌ teaspoon garlic powder (optional)
Salt and pepper, to taste
8 slices sandwich bread (white, whole wheat, or multigrain)
2 tablespoons butter, softened (optional, helps prevent sogginess)
Directions
In a bowl, combine cream cheese, mayonnaise, dill, lemon juice, garlic powder, salt, and pepper. Mix until smooth and spreadable. Adjust seasoning as needed.
Wash cucumbers well. Slice thinly with a sharp knife or mandolin for even slices. If cucumbers are very watery, lightly pat slices with paper towels.
Lightly butter one side of each bread slice (optional but prevents sogginess). Spread the cream cheese mixture generously over the bread.
Layer cucumber slices evenly on top. Top with another slice of bread and press gently.
Trim off crusts for a more traditional tea-style look (optional). Cut into triangles or rectangles for easy serving. Arrange neatly on a platter and serve immediately.
