Honey Garlic Chicken Bites Over Creamy Rice
Ingredients
For the Chicken:
1½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
Salt and black pepper, to taste
½ tsp garlic powder
5 cloves garlic, minced
¼ cup honey
2 tbsp soy sauce
1 tbsp apple cider vinegar
1 tbsp butter
For the Creamy Rice:
1½ cups jasmine or white rice
3 cups chicken broth
1 cup heavy cream
1 cup shredded mozzarella cheese
½ cup cream cheese, softened
½ cup grated Parmesan cheese
1 tbsp butter
Salt and pepper, to taste
1 tsp Italian seasoning
Fresh parsley, for garnish
Directions
Season chicken pieces with salt, pepper, and garlic powder.
Heat olive oil in a skillet over medium heat. Add chicken and cook until golden and fully cooked, about 6–8 minutes.
Add minced garlic and cook for 1–2 minutes until fragrant.
Stir in honey, soy sauce, apple cider vinegar, and butter. Simmer for 3–5 minutes until sauce thickens slightly. Set aside.
In a large saucepan, combine rice and chicken broth. Bring to a boil, then reduce heat and simmer covered for 15 minutes, or until rice is tender.
Stir in heavy cream, mozzarella, cream cheese, Parmesan, butter, Italian seasoning, salt, and pepper. Mix until creamy and smooth.
Spoon creamy rice onto plates and top with honey garlic chicken bites.
Garnish with fresh parsley and serve warm.
