Baked Chicken and Zucchini
Ingredients
4 boneless, skinless chicken breasts (about 1.5 pounds or 680g)
2 medium zucchinis, sliced into rounds
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning (or dried oregano)
Salt and pepper to taste
1/2 cup (50g) grated Parmesan cheese (optional)
Fresh parsley, chopped (for garnish)
Directions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper. Add the chicken breasts and toss to coat them evenly with the seasoning mixture.
In another bowl, toss the sliced zucchini with a little olive oil, salt, and pepper.
Place the seasoned chicken breasts in a single layer in a baking dish. Arrange the zucchini slices around the chicken.
If using, sprinkle the grated Parmesan cheese over the chicken and zucchini for added flavor.
Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). The zucchini should be tender and slightly golden.
Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
