Asparagus Stuffed Chicken Breast
Ingredients
4 boneless, skinless chicken breasts
12 asparagus spears, trimmed
1 cup mozzarella cheese, shredded
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper, to taste
2 tablespoons olive oil
Fresh parsley, chopped (for garnish
Directions
Preheat your oven to 375°F (190°C).
Place the chicken breasts on a cutting board. Using a sharp knife, carefully cut a pocket lengthwise into each breast (don’t cut all the way through).
Rub the chicken inside and out with olive oil, garlic powder, paprika, salt, and pepper.
Place 3 asparagus spears inside each pocket.
Add a generous amount of mozzarella cheese.
Secure with toothpicks to hold the stuffing in place.
Heat a large oven-safe skillet over medium-high heat with a drizzle of olive oil.
Sear chicken breasts for 2–3 minutes per side, until golden brown.
Transfer the skillet to the oven and bake for 20–25 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
Sprinkle with fresh parsley and serve hot.
