Thai Cilantro Sauce
Ingredients
35 g cilantro, leaves and stems
1-3 green chilies, adjust to taste
1 tbsp or 12 g sugar
6 cloves of garlic, peeled
3.5 tbsp or 50 ml water
1.5 tbsp or 22 ml fish sauce
2 tbsp or 30 ml fresh lime juice
Directions
Combine all the ingredients in a food processor or blender and blend until smooth. Taste and adjust the seasoning as needed—add a little extra sugar if it’s too spicy. If using a mortar and pestle, pound the dry ingredients first, then mix in the sauces.
