Pink Cherry Jell-O Fluff
Ingredients
1 package (3 ounces) cherry Jell-O
1 cup boiling water
1 cup cold water
1 can (20 ounces) crushed pineapple, undrained
1 can (14 ounces) sweetened condensed milk
1 container (8 ounces) whipped topping (such as Cool Whip), thawed
1 cup mini marshmallows
1 cup shredded coconut (optional)
1/2 cup chopped maraschino cherries, drained (optional)
Directions
In a large mixing bowl, dissolve the cherry Jell-O in 1 cup of boiling water. Stir for about 2 minutes until completely dissolved. Add 1 cup of cold water to the Jell-O mixture and stir to combine.
Stir in the undrained can of crushed pineapple. The juice from the pineapple will add extra flavor and help set the Jell-O.
Pour the sweetened condensed milk into the Jell-O mixture and stir until well combined. The sweetened condensed milk adds a rich, creamy sweetness to the dessert.
Cover the bowl with plastic wrap and refrigerate for about 1-2 hours, or until the mixture begins to thicken but is not fully set.
Once the Jell-O mixture has thickened, gently fold in the thawed whipped topping. Be careful not to over mix, as you want to keep the fluff light and airy.
Stir in the mini marshmallows. If using, also add the shredded coconut and chopped maraschino cherries. These mix-ins add texture and additional flavors to the fluff.
Cover the bowl again and refrigerate for at least another 1-2 hours, or until the fluff is fully set and chilled.
