Apple Oatmeal Breakfast Bake
Ingredients
1 cup oatmeal (rolled oats or quick oats)
2 medium apples (peeled or unpeeled, grated or finely chopped)
2 large eggs
5 ounces plain yogurt
1 teaspoon baking powder
1 teaspoon cinnamon (optional, but highly recommended)
A handful of walnuts or raisins (optional, for extra crunch/sweetness)
Directions
Wash and core the apples.
Grate them (for a moist, cake-like texture) or finely chop them (for little apple chunks).
In a bowl, combine the oats, grated apples, yogurt, eggs, baking powder, and cinnamon (if using).
Mix until well combined. The batter will be slightly thick.
Preheat oven to 350°F (175°C).
Line a small baking dish or loaf pan with parchment paper.
Pour the batter in and spread evenly.
Bake for 25–30 minutes, or until the top is golden and a toothpick comes out clean.
Let cool slightly before slicing.
Enjoy warm or cold, plain or with a dollop of yogurt on top.
