Scalloped Corn

Ingredients

1/2 cup melted butter OR margarine
2 eggs – beaten
1 cup sour cream – low-fat okay
8 1/2 oz. package cornbread muffin mix
15 oz. can creamed corn
15 oz. can whole kernel corn – un-drained

Directions

Combine all ingredients.

Pour into a greased 9″ X 9″ X 2″ casserole dish.

Bake in a 375 degree oven for 40 minutes, or until center is set (no longer jiggles when dish is shaken).
