Twice Baked Potatoes


4 lrg. baking potatoes – baked
1/2 cup sour cream OR cream cheese – low-fat okay
1/2 cup butter OR margarine – softened, low-fat okay
1/2 cup shredded cheddar cheese – low-fat okay
1/4 cup cooked, crumbled bacon – optional
1/4 cup minced celery – optional
1/2 tsp. salt
1/4 tsp. black pepper


Cut potatoes in half lengthwise and scoop potato out of the skins and into a bowl.

Add remaining ingredients to bowl and beat until fluffy.

Spoon the mixture back into the potato skins; place the filled skins on a baking sheet.

Bake in a 400 degree oven for 20 minutes.
