1 lb. margarine
2 Tbls. powdered espresso mix
1/4 cup granulated sugar
16 oz. bag semi-sweet chocolate chips
1/4 cup Kahlua
Melt margarine in the top of a heated double boiler. Add espresso and sugar and stir until dissolved. Add chocolate and stir until melted. Beat in eggs one at a time. Stir in Kahlua.
Cut waxed paper to fit in the bottom of an 8″ round baking pan; grease sides and wax paper bottom of pan. Pour mixture into baking pan.
Place pan in a larger baking pan and fill larger pan halfway to top of 8″ pan with hot water.
Bake in a 350 degree oven for 35 minutes.
Refrigerate at least 8 hours before turning onto a serving platter
1 box Duncan Hines® Fudge Brownie Mix
1/4 cup Kahlua
2 cups prepared chocolate mousse
2 cups real whipped cream
1 oz. semi-sweet chocolate shavings
Prepare brownie mix according to instructions on box, using the two egg recipe and substituting milk for the water.
Line (2) 9″ X 9″ X 2″ baking pans with either parchment paper or wax paper. Spray bottoms with non-stick cooking spray. Pour equal amounts of batter into each pan. Bake in a 325 degree oven for 25 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely.
Set one brownie pan aside; invert other pan and remove brownie in one piece; return to pan upside down; remove parchment paper.
Brush the brownie evenly with 1/2 the Kahlua; spread 1/2 the mousse evenly over the brownie; spread 1/2 the whipped cream over the mousse; sprinkle top evenly with chocolate shavings.
Remove second brownie from pan; brush with remaining Kahlua; place brownie on top of other brownie; spread remaining mousse evenly over the brownie; spread remaining whipped cream over the mousse.
Refrigerate until ready to serve.
1 whole wheel of Brie (19 ounces) Costco sells one, President Brie is the best for this recipe
1 cup Kahlua
1 cup packed light brown sugar
1 cup chopped pecans
Preheat oven to 350 degrees. Start by carefully slicing the rind off the top of the Brie wheel, but do not remove completely. Bake for 15 minutes. When the Brie is done baking, the top can be easily removed to expose the creamy cheese.
While the Brie is baking, in a medium saucepan, bring Kahlua and brown sugar to a boil and simmer for 10-15 minutes, until a syrupy consistency is made. Throw the pecans in for 2 minutes at the end to warm them through and completely cover with the sauce.
Remove the Brie from the oven (removing top rind) and pour Kahlua sauce over the Brie. Serve warm with crackers.
