Southern Style Tomato Gravy
Ingredients
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 () can diced or crushed tomatoes
1 cup low-sodium chicken broth
1/4 cup half-and-half or heavy cream
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper, plus more as needed
Directions
Melt 3 tablespoons unsalted butter in a medium cast iron skillet or saucepan over medium heat. Add 3 tablespoons all-purpose flour and stir continuously until the roux is light brown or the color of peanut butter, about 1 minute.
Add 1 () can diced or crushed tomatoes, 1 cup low-sodium chicken broth, and 1/4 cup half-and-half or heavy cream. Stir to combine, then bring to a boil over medium-high heat.
Reduce the heat to low and simmer uncovered, stirring occasionally, until thick enough to coat the back of a spoon, 8 to 12 minutes.
Add 1 teaspoon kosher salt and 1/2 teaspoon black pepper and stir to combine. Taste and season with more black pepper as needed.
