For the Baked Potatoes:
4 large russet potatoes
Olive oil
Salt
For the Filling:
2 cups cooked chicken, shredded or diced (grilled, rotisserie, or leftover)
1 1/2 cups broccoli florets, chopped small
1 tbsp butter
1/2 cup milk or cream
1 cup shredded cheddar cheese
1/4 cup sour cream or Greek yogurt
Salt and pepper, to taste
Optional: garlic powder, onion powder, paprika for extra flavor

Crumbled bacon
Chopped green onions
Hot sauce or ranch dressing
