Copycat Cracker Barrel™ Hash Brown Casserole

Ingredients

1 (2 pound) package frozen hash brown potatoes, thawed
1/2 cup butter, softened
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup chopped onion
1 ( ounce) can condensed cream of chicken soup
16 oz. sour cream
2 cups shredded cheese (Colby or Sharp cheddar), divided

Directions

Preheat the oven to 350 degrees F (175 degrees C). Spray one 9×13 inch pan with non-stick cooking spray.

In a large bowl, combine the potatoes, butter, salt, pepper, onions, soup and 1 & 1/2 cups of cheese. Gently mix and pour into prepared pan or dish.

Top with remaining 1/2 cup of shredded cheese.

Bake in the preheated oven until browned, about 40 minutes. *

* You can assemble this casserole the night before and store it in the fridge overnight, just be sure that your hash browns are thawed when you combine them with the other ingredients.
