Strawberry Basil Spinach Salad

Ingredients

For the Salad:
6 cups baby spinach, washed and dried
1½ cups fresh strawberries, hulled and sliced
½ cup fresh basil leaves, whole or chiffonade (thinly sliced)
¼ cup crumbled feta or goat cheese
¼ cup candied or toasted pecans (or walnuts, almonds)

Optional: ¼ small red onion, thinly sliced

For the Balsamic Vinaigrette:
3 tbsp extra virgin olive oil
1½ tbsp balsamic vinegar
1 tsp Dijon mustard
1 tsp honey or maple syrup
Salt & black pepper to taste

Directions

In a small jar or bowl, whisk together olive oil, balsamic vinegar, mustard, honey, salt, and pepper. Set aside.

In a large salad bowl or on a platter, layer the spinach, strawberries, and basil.

Sprinkle cheese, nuts, and red onion (if using) evenly over the salad.

Drizzle with the balsamic vinaigrette just before serving. Toss gently or serve dressing on the side.
