Midnight Pork

Ingredients

For the chops:
1 pound pork chops
salt, to taste
pepper, to taste
Italian seasoning, to taste
1 tablespoon olive oil
1 tablespoon butter

For the honey balsamic sauce:
2 tablespoons butter, divided
2 scallions, chopped
4 cloves garlic, chopped
1 teaspoon fresh rosemary, chopped
1 teaspoon fresh thyme, chopped
1/4 cup balsamic vinegar
1/4 cup honey
2 tablespoons honey Dijon mustard
salt, to taste

Directions

Generously season the pork chops with salt, pepper, and Italian seasoning.

On the stove top, heat a large pan over medium-high heat. Add the olive oil and 1 tablespoon butter to the hot pan.

Once the butter has melted and become bubbly, add the pork chops. Sear the chops for 3 minutes on each side. Transfer the chops to a plate.

Reduce the heat to medium. Add 1 tablespoon butter to the hot, empty pan.

Add the chopped scallions, garlic, rosemary, and thyme, and cook until fragrant, about 2 minutes.

Add the remaining 1 tablespoon butter, balsamic vinegar, and honey, cooking until well-incorporated, about 2 minutes.

Add the Dijon mustard. Taste the sauce for seasoning, adding salt as needed.

Add the pork chops back to the skillet and spoon the sauce over them.

Cook until the pork chops reach an internal temperature of 145 degrees F.
