Creamy Chicken Orzo

Ingredients

1 tablespoon olive oil
1 cup onion, chopped
1 cup celery, chopped
1 cup carrot, peeled and sliced
4 garlic cloves, minced
8 cups chicken stock
2-3 cups chicken, cooked and shredded
1 (1-pound) box Orzo
1 tablespoon parsley, minced
1 teaspoon salt
1/4 teaspoon pepper

Directions

Heat the olive oil in a large pot, on the stove-top, over medium heat.

Add the celery, onion, and carrots to the pot and cook for 7 minutes, until the onion turns translucent.

Add in the garlic and sauté for 2 more minutes. It should be aromatic but not burning.

Add in the chicken stock and bring to a boil.

Add in the orzo and the cooked, shredded chicken breast.

Lower the heat to medium, then add in the parsley, salt, and pepper.

Simmer for 20 minutes, until the vegetables are tender and the orzo is fully cooked through (having absorbed most of the liquid).
