Balsamic Chicken with Strawberry Basil Relish

Ingredients

For the Chicken:
4 boneless, skinless chicken breasts
2 tbsp olive oil
1/4 cup balsamic vinegar
2 cloves garlic, minced
1 tbsp honey (optional for slight sweetness)
Salt and pepper, to taste

For the Strawberry Basil Relish:
1 ½ cups fresh strawberries, diced
1/4 cup fresh basil, chopped
1 tbsp balsamic vinegar
1 tsp honey or maple syrup (optional)
1 tsp lemon juice (for brightness)
Pinch of salt and pepper

Directions

In a bowl or zip-top bag, combine balsamic vinegar, olive oil, garlic, honey, salt, and pepper.

Add the chicken and let marinate for 15 minutes (or up to 2 hours in the fridge).

Heat a large skillet or grill pan over medium-high heat.

Remove chicken from marinade and cook for 6-8 minutes per side, or until golden and internal temp reaches 165°F (74°C).

Remove from heat and let rest for 5 minutes.

In a medium bowl, gently mix together the diced strawberries, chopped basil, balsamic vinegar, honey (if using), lemon juice, salt, and pepper.

Taste and adjust seasoning as needed. Let it sit for a few minutes to allow flavors to meld.

Plate the chicken breasts.

Spoon the fresh strawberry basil relish generously over the top.

Optionally garnish with extra basil leaves or a drizzle of balsamic reduction.
