Taco Casserole

Ingredients

1 pound ground beef 85/15
16 ounces salsa
1 can black beans 16 ounces

Taco Casserole:
2 cups tortilla chips lightly crushed
1½ cups sour cream
1 cup Cheddar Cheese shredded
½ cup Monterey Jack Cheese shredded
1 medium tomato chopped

Topping:
¼ cup olives sliced
2 green onions cut into ¼-inch slices
2 cups lettuce shredded

Directions

Use a large skillet and cook the ground beef over medium heat until cooked. Use a wooden spoon to break up meat. Transfer the beef into a colander and drain the excess fat.

Add the beef to the skillet and combine with drained black beans and salsa. Simmer for about 5 minutes until the mixture is heated, stirring occasionally.

Cover a 2-quart casserole dish with the coarsely crushed tortilla chips. Layer the beef mixture over the tortilla chips. Add a thin layer of sour cream. Sprinkle with Cheddar and Monterrey Jack cheese and top with diced tomato.

Bake the casserole for 20 minutes at 350° Fahrenheit until the cheese has melted and is bubbly.

Remove the Taco Casserole from the oven. Serve on a bed of shredded lettuce and top with your favorite toppings.
