Creamy Tuscan Mushrooms

Ingredients

1 pound Baby Bella Mushrooms (cremini or white button mushrooms), sliced thick
4–5 cloves Garlic, Finely minced
2 tablespoons Olive oil
2 tablespoons Butter
½ cup Sun-dried tomatoes, Sliced, oil-packed is preferred
2 cups Baby spinach, Washed and roughly chopped
1 cup Heavy cream
½ cup Parmesan cheese
Salt and pepper, To taste
1 teaspoon Italian seasoning
A pinch Red chili flakes (optional)

Directions

Start by cleaning the mushrooms using a damp paper towel. Avoid rinsing them under water as mushrooms absorb liquid easily, which can affect their texture when cooked. Slice them thick so they retain their meatiness.

Mince your garlic, chop the spinach coarsely, and slice the sun-dried tomatoes if they’re not already julienne.

Grate the Parmesan and set all ingredients within reach, as this dish comes together quickly once you start cooking.

Heat olive oil and butter in a large skillet over medium-high heat. Once melted and sizzling, add the sliced mushrooms. Let them cook undisturbed for 3–4 minutes to brown one side, then stir and cook another 4–5 minutes until golden and most of the liquid has evaporated. Avoid overcrowding the pan. If needed, cook mushrooms in batches to ensure proper browning.

Add the minced garlic and sun-dried tomatoes to the skillet. Stir continuously for 1–2 minutes until fragrant. If using white wine, now is the time to de-glaze the pan—pour it in and scrape up any browned bits from the bottom for extra flavor. Let the wine simmer until mostly evaporated.

Lower the heat to medium-low. Pour in the heavy cream, stirring well to incorporate all the ingredients. Let it simmer gently for 4–5 minutes, allowing the sauce to thicken slightly.

Add grated Parmesan cheese slowly while stirring, allowing it to melt into the cream sauce. Season with salt, black pepper, Italian seasoning, and red chili flakes (if using).

Fold in the chopped spinach and cook for another 2–3 minutes until wilted. The spinach not only adds color but also brings a fresh, earthy balance to the richness of the cream.

Taste and adjust seasoning as needed.
