Feta Psiti (Greek Baked Feta with Tomatoes)

Ingredients

7 oz block Greek feta cheese
2 cups cherry tomatoes
3 tbsp olive oil
1 tsp dried oregano
1/2 tsp black pepper
1/2 tsp chili flakes (optional)
2 cloves garlic (optional)

Directions

Set your oven to 400°F (200°C) and allow it to fully heat so the baking process starts evenly and correctly.

Drizzle a small amount of olive oil into your baking dish and spread it around so the base is lightly coated.

Place the cherry tomatoes evenly in the dish, making sure they are spread out so they roast instead of steam.

Add a pinch of salt, pepper, and oregano, then gently toss them so they are well coated with oil and seasoning.

Set the feta in the center of the dish, keeping it whole so it softens evenly during baking.

Drizzle olive oil over the feta and sprinkle oregano, pepper, and chili flakes for extra flavor.

Scatter sliced garlic around the tomatoes so it becomes soft and aromatic as it cooks.

Place the dish in the oven and bake for 20–25 minutes, allowing the tomatoes to burst and the feta to soften.

Turn on the broiler for 2–3 minutes at the end to create a lightly golden top on the feta.

Gently press and mix the feta with the tomatoes just before serving, keeping some texture for the best result.
