Cajun Chicken Pasta

Ingredients

For the chicken:
2 boneless, skinless chicken breasts
1 tbsp Cajun seasoning (store-bought or homemade)
1 tbsp olive oil
Salt & pepper to taste

For the pasta:
8 oz fettuccine or penne pasta
2 tbsp butter
1 tbsp olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small red onion, thinly sliced
3 cloves garlic, minced
1½ cups heavy cream
½ cup grated Parmesan cheese
1 tsp Cajun seasoning (or more to taste)
Salt and pepper to taste
Fresh parsley (for garnish)

Optional: crushed red pepper flakes for heat

Directions

Boil a pot of salted water and cook pasta according to package instructions until al dente. Drain and set aside.

Pat the chicken dry. Rub both sides with Cajun seasoning, salt, and pepper.

Heat 1 tbsp olive oil in a skillet over medium-high heat.

Cook chicken 5–6 minutes per side or until internal temp reaches 165°F (75°C).

Let rest for 5 minutes, then slice into strips.

In the same skillet, add butter and 1 tbsp olive oil.

Sauté onions and bell peppers until tender (about 4–5 minutes).

Add garlic and cook for 1 minute more.

Pour in the heavy cream, bring to a gentle simmer.

Stir in Parmesan cheese and 1 tsp Cajun seasoning. Adjust seasoning to taste.

Let the sauce simmer until slightly thickened (about 3–5 minutes).

Add the cooked pasta to the sauce. Toss to coat.

Top with sliced chicken.

Garnish with parsley and red pepper flakes if desired.
