Thai Peanut Noodles
Ingredients
8 ounces rice noodles
1 cup cooked shredded chicken or tofu
½ cup carrots, julienned
½ cup bell pepper, sliced
¼ cup roasted peanuts, chopped
2 tbsp cilantro, chopped
1 tbsp vegetable oil
Peanut Sauce:
3 tbsp peanut butter
1 tbsp soy sauce
1 tbsp lime juice
1 tbsp honey
2 tbsp warm water
Directions
Cook rice noodles according to package directions.
Whisk together all peanut sauce ingredients.
Heat oil and sauté carrots and bell peppers for 2 minutes.
Add chicken or tofu.
Toss in noodles and peanut sauce.
Cook for 1–2 minutes until coated.
Garnish with peanuts and cilantro.
Serve warm or chilled.
