Cherry Clafoutis – French Baked Custard with Cherries

Ingredients

2 cups (300g) fresh cherries, pitted
3 large eggs
1/2 cup (100g) sugar
1 cup (240ml) milk
1/2 cup (120ml) heavy cream
3/4 cup (95g) all-purpose flour
1 tsp vanilla extract
1/2 tsp almond extract (optional)
1 tbsp butter (for greasing)
Powdered sugar, for dusting

Directions

Pit cherries and spread them in a buttered baking dish.

Blend batter: Mix eggs, sugar, milk, cream, flour, vanilla, and almond extract until smooth.

Pour batter over the cherries.

Bake at 175°C (350°F) for 35–40 minutes until golden and just set.

Cool slightly and dust with powdered sugar before serving.
