Mom’s Rolled Oat Cake

Ingredients

1 & 1/4 cups boiling water
1 C quick cooking rolled oats

1 C brown sugar
1 C white sugar
1/2 C softened butter
1 Tsp vanilla
2 eggs

1 & 1/2 C flour
1 Tsp baking soda
1/2 Tsp salt
1 Tsp cinnamon
1/2 Tsp nutmeg

Directions

Pour boiling water over rolled oats. Let sit 20 minutes.

Add sugars, butter, vanilla, and eggs. Mix well.

Sift together flour, baking soda, salt, cinnamon, and nutmeg. Add to oatmeal & sugar mixture. Stir well.

Pour into prepared oblong pan. Bake at 305 for 30 – 35 minutes or until a toothpick comes out clean when inserted in middle of cake.

Let cake cool completely.

When serving, slice and top with Butterscotch Sauce.
