Basic French Crepes
Ingredients
1 cup all-purpose flour
1 1/2 cups whole milk
2 large eggs
2 tbsp melted butter
1 tbsp sugar (optional, for sweet crepes)
1/4 tsp salt
1 tsp vanilla extract (optional, for sweet crepes)
Directions
In a large mixing bowl, whisk together the flour, milk, eggs, melted butter, sugar, salt, and vanilla extract until smooth. Let the batter rest for at least 30 minutes.
Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with butter or oil.
Pour about 1/4 cup of batter into the pan and swirl to coat the bottom evenly. Cook for about 1-2 minutes until the edges start to lift and the bottom is golden brown. Flip and cook for another 1-2 minutes on the other side. Remove from the pan and repeat with the remaining batter.
Fill the crepes with your favorite sweet or savory fillings and serve warm.
