1/2 cup rice vinegar
1/2 cup peanut oil OR vegetable oil
1/3 cup creamy peanut butter
2 1/2 Tbls. soy sauce
2 1/2 Tbls. packed brown sugar
2 Tbls. minced fresh ginger
1 Tbls. minced fresh garlic
1 lb. package cole slaw mix
15 oz. package broccoli slaw mix
6 green onions – trimmed, sliced diagonally
1/2 cup chopped fresh cilantro
1/2 cup chopped peanuts
Whisk together rice wine vinegar, oil, peanut butter, soy sauce, brown sugar, ginger, and garlic; set aside.
In a large salad bowl, toss together slaw mixes, onions, cilantro, and peanuts.
Pour prepared dressing into salad bowl and stir to coat.
* If making ahead of time, wait to pour the prepared dressing over salad items until close to serving time.
