Firecracker Chicken

Ingredients

1 1/4 pounds chicken breasts, boneless, skinless, and cut into 1-inch pieces
salt, to taste
pepper, to taste
1/3 cup cornstarch
2 eggs beaten
3 tablespoons vegetable oil
1/3 cup buffalo hot sauce

1/2 cup brown sugar
1 tablespoon rice vinegar
1/4 teaspoon red pepper flakes, plus more to taste
1/4 cup green onions, sliced, optional, for garnish

Directions

Preheat the oven to 350 degrees F.

Grease a 9×13-inch pan with cooking spray.

In a shallow dish or on a plate, season the chicken with salt and pepper.

Sprinkle the cornstarch over the chicken, tossing and turning it to evenly coat.

In a shallow dish or pie plate, pour the beaten eggs.

Dip the chicken in the egg mixture.

Over high heat in a large pan on the stove-top, heat the vegetable oil.

In a single layer, working in batches as necessary, sauté the chicken until golden brown, about 3-4 minutes per side.

Place the sautéed chicken in the prepared baking pan.

In a small bowl, whisk together the buffalo hot sauce, brown sugar, rice vinegar, and red pepper flakes.

Pour the sauce over the chicken in the pan.

Bake the chicken for 35 minutes, stirring once halfway through.

Remove the chicken from the oven, top with the green onions, and serve!
