Easy Savory Pancakes

Ingredients

2 Eggs
1.5 cups Milk
1.5 cups Water
1 tablespoon Sugar
1 teaspoon Yeast
1 teaspoon Baking Soda
3.5 cups Flour
1 teaspoon Salt
1 Green or Red Pepper (diced)
1 Tomato (diced)
1 Potato (peeled and grated)
120 grams Cheese (grated, any kind except processed)

Directions

Start by preparing the batter. Beat the eggs in a mixing bowl, then add milk, water, and sugar. Stir in the yeast and baking soda, ensuring everything is well combined. Gradually add the flour while stirring to prevent lumps. Sprinkle in the salt and mix until the batter is smooth. Let the batter rest for about fifteen to twenty minutes to allow it to rise slightly.

While the batter rests, prepare the vegetables and cheese. Dice the pepper and tomato into small pieces. Peel and grate the potato, and grate the cheese as well. These ingredients will add texture and flavor to the pancakes.

Once the batter has rested, gently fold the diced vegetables and grated cheese into it. Be careful not to over mix, as this can deflate the batter. The mixture should be thick but pour able, with the vegetables and cheese evenly distributed.

Heat a pan or griddle over medium heat. Lightly grease the surface if needed. Pour ladle fulls of the batter onto the pan to form pancakes of your desired size. Allow them to cook until bubbles form on the surface, which usually takes a couple of minutes.
