Creamy Feta Dip

Ingredients

6 oz. block Feta cheese *
1/2 c. plain Greek yogurt
2 tsp. extra-virgin olive oil
1 T. fresh lemon juice
1 tsp. finely minced lemon zest
1/4 tsp. dried dill weed
pinch black pepper

Directions

Using your fingers, crumble feta into small chunks. Place in a bowl. Add Greek yogurt and olive oil; stir to combine.

Add lemon juice, lemon zest, dill, and pepper. Stir until well combined.

Refrigerate for at least an hour to allow flavors to meld. Serve with whole grain crackers and/or veggies for dipping.

* I highly recommend using block-form Feta for this recipe and crumbling it yourself, rather than using pre-crumbled Feta crumbles. The block Feta has more moisture than the crumbles, and creates a creamier dip.
